I love overnight breakfast, which isnβt called overnight oats because it usually only contains *some* oats. This week, itβs a little more oat-heavy than usual because itβs gluten-free week, but hereβs the basic formula for 2-3 portions. Be warned, this is paste.
Whisk to combine:
100 grams of vegan yogurt (I like Pillars)
30 grams/2 tbsp of nut butter
1 cup plant milk
7 grams/1 tsp jell-o instant pudding mix (this DOES NOT have gelatin!)
Add:
50 grams of chia seeds
50 grams of oat bran or a combination of oat bran, wheat bran, weetabix cereal, ten grain hot cereal, or whatever else you like
For extra fun, put some crushed up cookies in it, or maybe add a chocolate shell on top of each portion, whatever you like
Serve with apples or whatever
